Creamy Groundnut Soup
A rich, nutty, and spicy soup made from roasted peanuts, usually served with fufu or rice balls (omtuo).

Ingredients
- 1 cup natural peanut butter (no added sugar)
- 500g chicken or goat meat, cut into pieces
- 2 large tomatoes
- 1 large onion
- Fresh ginger and garlic
- 2 Scotch bonnet peppers
- 1 tbsp tomato paste
- Salt and bouillon cubes to taste
Instructions
Season the meat with salt, blended ginger, garlic, and onions. Steam in a pot for 10-15 minutes.
In a separate pan, mix the peanut butter with a little water and the tomato paste. Stir over low heat until the oil begins to surface.
Add the peanut mixture to the steaming meat.
Add whole tomatoes, onion, and peppers to the pot. Once they are soft, remove them, blend, and strain back into the soup.
Add enough water to reach your desired consistency and simmer for 25-30 minutes until the oil rises to the top.
Cook's Tips
“The oil rising to the top is the sign that the soup is ready. Serve with fufu for the most authentic experience, but it's also delicious with plain steamed rice.”
